In this easy yet stunning dish, avocados are the star. Lightly seasoned with fresh lemon juice and extra virgin olive oil, they’re enhanced with kosher salt, cracked black pepper, chopped herbs, and a touch of diced tomato.
I first tasted something similar at a luxury lakeside resort in Austria during a brunch buffet—and I couldn’t stop going back for more. The simplicity was what made it so memorable. These “dressed avocados” paired beautifully with everything from eggs and meats to toasted bread and baguette slices.
They come together in minutes, look incredibly appealing on the table, and work as a versatile side dish. Whether served with salads, grilled proteins, or part of a breakfast spread, they fit right in. You can even give them a Latin-inspired twist by swapping lemon for lime and chives for cilantro—essentially turning them into a deconstructed guacamole.
Ingredient Notes
Avocados
Choose ripe avocados that are soft but still firm enough to slice cleanly. This is a perfect recipe when you have several ripe avocados ready to use.
Olive Oil
A good-quality extra virgin olive oil is ideal. If you prefer a milder taste, a lighter olive oil works too. Infused oils, like garlic or lemon, can add an extra layer of flavor.
Lemon Juice
Freshly squeezed lemon juice is key—avoid bottled versions, which can taste overly sharp or bitter.
Salt & Pepper
Skip fine table salt and opt for kosher salt or flaky sea salt for better texture. Freshly ground black pepper is best, though any type will do.
Tomato
Tomato acts more as a finishing touch. It adds color and freshness, but the dish still works without it. Any variety of tomato can be used.
Chives
Chives bring a mild onion flavor that complements the avocado nicely. If unavailable, try soft herbs like parsley or tarragon for a different twist.
How to Slice the Avocados
Cut each avocado in half and remove the pit.
Use a spoon to gently scoop out each half while keeping it intact.
Place the halves cut-side down on a board and slice into thin strips (about ⅛–¼ inch thick).
Carefully transfer the slices to a serving plate, fanning them out in an accordion-like pattern for a beautiful presentation.
How to Dress the Avocados
Drizzle olive oil evenly over the sliced avocado.
Squeeze fresh lemon juice directly on top. Tip: Squeeze the lemon over your hand to catch any seeds while letting the juice fall through your fingers.
Sprinkle with salt and pepper.
Finish with chopped chives and diced tomatoes. Add extra lemon wedges on the side if desired.
Serving Ideas
Avocados aren’t always thought of as a side dish, but this version works perfectly in that role. It pairs well with meals throughout the day. Try serving it alongside:
Breakfast sandwiches
Breakfast taquitos
Grilled chicken and vegetable skewers
Steak and rice bowls
Pasta salad with Southwest flavors
Fresh caprese-style salads
FAQs
Can I prepare this in advance?
The lemon juice helps slow browning, but over time the avocados will still discolor and the dressing may pool at the bottom. For best results, assemble within 30 minutes of serving.
How should leftovers be stored?
If you have extras, mash everything together into a quick guacamole-style spread. It’s great with veggies, chips, or toast. Store in an airtight container with plastic wrap pressed directly onto the surface to reduce browning. It’s best enjoyed within a day.
